Fabio Signorelli is an oenologist originally from Mazara, after graduating in Viticulture and Oenology at the University of Palermo and collaborating in various wineries, from Sicily and Montalcino, Fabio arrives on Etna where he stops to work for new companies that arise on the Muntagna almost like mushrooms in the Linguaglossa pine forest. He chooses only small producers of natural wines, who share his enological ideas; all this furriare for the districts of Etna allows him to understand the characteristics of the vineyards, notice the differences in the land, crossing them together with the farmers who grew up here, between lapilli and ash, between Nerello and Carricante. For Fabio, making natural wine means understanding the vineyard , its different specificities, understand that every year is different. On Etna everything changes within a few meters, soils change, exposures, microclimates and wines must be able to convey all this �.
