Podere Cipolla located just on the outskirts of Reggio Emilia is the love letter of Denny Bini to his homeland. It all started with a few hectares that Denny rented from his grandfather in 2003 while still working as a cellar master for another Lambrusco estate. Denny focuses on regional varietals, fermentations are carried out using indigenous yeasts and re-fermentation takes place in the bottle spontaneously following ancient local recipes, without the use of autoclaves, as in the Charmat method, or the addition of sugar. Over the past two decades Denny has become something of a legend in the world of Lambrusco working to lead the region back to more natural production methods and seeding the future for a renaissance.
