Sipsun is a collaboration between winemakers Alex Craighead and Theo Coles, made at their urban winery in the centre of Christchurch. Fruit is chosen season by season from across the South Island for brightness and energy rather than weight — low intervention winemaking, without letting the process matter more than what ends up in the glass.
