"Pre-Technology" winemaking is what Theo Coles of The Hermit Ram categorizes his style as. Sourcing fruit from sites throughout Canterbury Theo is presenting a picture of New Zealand that we long knew was posssible. His wines are wines of depth and complexity, but at their core they are a delight to drink. The Hermit Ram properly began in 2012 when Theo worked alongside grower Gareth Renowden to produce a few barrels of Pinot noir from a limestone dominated site in the Waipara Gorge, the line has since expanded to include Muller Thurgau, Sauvignon Blanc and Pinot gris from sites dotted across the hills of Canterbury. We are excited to partner with Theo and showcase the potential of the South Island of New Zealand.
